One thing I like about this time of year in Sardegna. Is there are nice things growing wild, so you can eat for free. But you will need to leave the sofa and go and look for it, for me that’s the best part. Well except for eating what you find that is.
At this time of year plus a few months you will find growing wild. A host of different mushrooms, Asparagus, bietole, carciofi. There is nothing like trekking in the mountains with my dogs looking for Asparagus collecting enough, which is not difficult but time consuming of around 3 to 4 hours but time passes quickly and very therapeutic. Then return home and cook your spoils. Which is exactly what I did yesterday. I cooked it to eat with pasta. So here is the recipe.
You will need quite a lot of asparagus which is about as much as you can hold in one hand, first wash it then boil it in slightly salted water for 10 minutes, remove the asparagus to another pan keeping the water for the pasta later. With the asparagus add 2 cloves of garlic chopped, 2 dried chillies chopped, olive oil, cook until becomes a pesto stir frequently, maybe adding some boiled water from time to time. Re- boil the water cook the pasta add to asparagus plus more oil stir well serve and top with a little parmigiano cheese, a nice Rossato wine and that’s it.
